Attempting to go 'cold turkey' and lock your phone away indefinitely rarely works. Your brain is accustomed to high levels of dopamine, and sudden deprivation usually results in a massive rebound effect where you end up bingeing on screen time.
A structured reset works by gradually introducing friction into your digital habits. By slowly changing your environment over seven days, you give your dopamine receptors time to recalibrate. You learn how to use your phone as a tool, rather than relying on it as a pacifier.
Follow these seven steps sequentially. Do not skip ahead. Add one new rule each day.

Go to your phone's accessibility settings and turn the screen completely black and white.
Out of sight, out of mind. The more friction required to find an app, the less you will use it.
Remove everything from your home screen except utility apps (maps, calendar, notes, banking).
Checking your phone immediately upon waking floods your brain with cortisol and sets a reactive tone for the day.
Do not look at a screen for the first 30 minutes after waking up.
Break the automatic reflex of picking up the phone during every moment of boredom.
Put a rubber band around your phone. Every time you unlock it, you must state aloud what you are using it for.
